Stuffed Acorn Squash

WOW these are good! Made these up north a couple weekends ago and had to recreate them at home for a different dinner idea 💃 Seriously this looks like it’d be a lot of work, but this actually took minimal effort and time. This recipe can be stuffed with whatever meat, cheese and veggies you prefer (I feel a taco recipe would be delicious!). Thinking this is a new, simple recipe idea for busy people who want a creative, quick dinner idea!

What I used:
Organic ground turkey
1/2 onion
Minced garlic cloves 
1 organic orange pepper
~ 1/2 can organic diced tomatoes 
Organic mushrooms 
1 organic egg 
@kerrygoldusa grass fed white cheddar cheese on top. 

Directions:
Preheat oven to 350. Cut open organic acorn squash and place face down on sheet pan covered in olive oil and bake for 25-30 minutes until soft. While they are baking, add in olive oil or ghee to a pan with chopped garlic cloves, 1/2 onion and I used organic ground turkey until browned. Then added in 1 pepper and some organic diced tomatoes to the pan to sauté. Once things are browning, I added one organic egg and mixed well with sea salt, pepper, and basil. Take out the squash and add the sautéed meat/veggies, top with preferred cheese and put back in oven for 6-10 minutes until cheese is melted to preference! Give this a try!!
