Lemon - chia seed muffins!

Something about the warmth, sunshine and these lemon poppyseed muffins go so well together πŸ‹πŸŒžIt’s been way too long since we’ve made these and they are some of our favorite muffins! A nice switch up from our normal banana muffins. Give these a try πŸ˜‹ .

2 medium spotty bananas, mashed
6 Tbsp organic coconut oil, melted
2 organic eggs
1 tsp vanilla
1/4 cup honey or maple syrup
1.5 tsp lemon extract or lemon juice
1 3/4 cup almond flour
1/4 cup coconut flour
2 Tbsp chia seeds
1 tsp baking powder
~ 1/4 Tsp sea salt. .

Preheat oven to 350 and grease/line 12 muffin cups. In a large bowl, mash the bananas and then add in the remaining wet ingredients and mix together. Dump in dry ingredients and mix well. Pour ~ 1/4 cups full into muffin tins and bake for 15-25 minutes until they come out clean with a toothpick!
