Something about the warmth, sunshine and these lemon poppyseed muffins go so well together ππItβs been way too long since weβve made these and they are some of our favorite muffins! A nice switch up from our normal banana muffins. Give these a try π .

2 medium spotty bananas, mashed
6 Tbsp organic coconut oil, melted
2 organic eggs
1 tsp vanilla
1/4 cup honey or maple syrup
1.5 tsp lemon extract or lemon juice
1 3/4 cup almond flour
1/4 cup coconut flour
2 Tbsp chia seeds
1 tsp baking powder
~ 1/4 Tsp sea salt. .

Preheat oven to 350 and grease/line 12 muffin cups. In a large bowl, mash the bananas and then add in the remaining wet ingredients and mix together. Dump in dry ingredients and mix well. Pour ~ 1/4 cups full into muffin tins and bake for 15-25 minutes until they come out clean with a toothpick!
