Super Bowl or not, you NEED to make this #whole30 buffalo chicken dip 🤤🤤 So simple and hard to believe it is super clean! Made this batch for the super bowl today and will likely have leftovers to make a meal out of it! Could top over a roasted sweet potato to make it a meal 😋

1 1/4 lb organic chicken tenders or boneless skinless thighs* (2 1/2 - 3 cups of chicken - could use rotisserie chicken to save on time!) 1 tbsp olive oil Plus sea salt and pepper
1/2 medium onion chopped
4 cloves garlic minced
1 Tbsp ghee or other cooking fat
2/3 cup @sirkensingtons avocado oil mayo
2/3 cup organic unsweetened coconut cream this is the thick part of a chilled can of coconut milk
1 tbsp brown mustard Whole30 compliant
1 tsp garlic powder
1 tsp onion powder
1 tsp dried dill
1/2 tsp smoked paprika
1/3 cup hot sauce Whole30 compliant - I used @franksredhot
1 1/2 Tbsp fresh lemon juice
.
Preheat oven to 400 and cook chicken if you aren’t using rotisserie chicken. In a pan, add ghee to sauté the onion and garlic until softened. In a bowl mix together the Mayo, coconut cream, hot sauce, spices, lemon juice and add in the onion and garlic. Add the pulled organic chicken to the bowl and then transfer to a baking dish. Bake @ 350 for 20-25 minutes until sides are starting to bubble!
